Most people avoid seeing how the sausage is made, but you're not like most people, are you? Learn how to make your own sausage with our Head Folkie of the day, Chef Drew of Pico. You'll learn to break down meat properly, season it, select casing options and learn smoking techniques. Participants will make two different kinds of sausage during class, and will take both home along with additional recipes. For those interested in smoking your sausage, Chef is opening his smoker to you while you attend the Old Days festivities. We're keeping this class small on purpose, and the first 12 people who sign up will also receive their own sausage stuffer to take home. And rumor has it, there might be some Lumen wines to sample as well.
